Cherub Rock

This raw-milk, aged Goat cheese is the sibling of our truffle cheese. Each wheel sucks down a glass of Spanish Red wine before we age from 3-5 months to develop the complexity. We notice the fruity aroma of wine and grapes, and notes of pepper and spice from the wine come through in the flavor of this cheese.
