You know I love a good salmon dish, but this Slow Roasted Salmon with Spicy Fennel-Asparagus Salad is a doozy. Not in the overly complicated, spend all day in the kitchen, with a bazillion techniques and steps kinda way. No, its a doozy in the I-got-dinner-prepped-so-fast-I-was-able-to-take-a-nap kinda way. I even mentioned to my wife during the meal that I was shocked it tasted so good. “Why wouldn’t it taste good??”, she asked. Because I barely did anything to it! Just goes to show you that as long as you have great ingredients, and handle them with care, you dont need to do much to make them taste great.
I’m not sure if you noticed this but I love using shaved vegetables in my recipes. Sometimes (I’ll be completely honest), its out of laziness. It’s luscious, spicy, crunchy, and refreshing. It’s a perfect lunch or light dinner. And it’s especially great for a busy summer evening when you’d much rather be outside than in the kitchen.
