You know I love a good salmon dish, but this Slow Roasted Salmon with Spicy Fennel-Asparagus Salad is a doozy. Not in the overly complicated, spend all day in the kitchen, with a bazillion techniques and steps kinda way. No, its a doozy in the I-got-dinner-prepped-so-fast-I-was-able-to-take-a-nap kinda way. I even mentioned to my wife during the meal that I was shocked it tasted so good. “Why wouldn’t it taste good??”, she asked. Because I barely did anything to it! Just goes to show you that as long as you have great ingredients, and handle them with care, you dont need to do much to make them taste great.

I’m not sure if you noticed this but I love using shaved vegetables in my recipes. Sometimes (I’ll be completely honest), its out of laziness. But most of the time its because a crunchy salad makes a dish go from zero to hero in very little time. In the case of this Slow Roasted Salmon with Spicy Fennel-Asparagus Salad, the super soft (almost creamy) salmon pairs so perfectly with the spicy, crunchy salad that it’s hard to imagine any slow roasted salmon being served with any other side dish other than this salad. It’s luscious, spicy, crunchy, and refreshing. It’s a perfect lunch or light dinner. And it’s especially great for a busy summer evening when you’d much rather be outside than in the kitchen.

Instructions
Slow Roasted Salmon
  1. Preheat oven to 225 degrees. Combine the Dijon mustard, whole grain mustard, thyme, and maple syrup in a small bowl. Coat each salmon filet with the mustard mixture and place on a sheet pan. Season with salt before placing in oven. Roast for 30-40 minutes, or until internal temperature reaches 115 degrees (medium rare).

Spicy Fennel-Asparagus Salad
  1. After shredding the asparagus and fennel, place vegetables in a bowl and cover with water and a couple handfuls of ice. Place in refrigerator for 30 minutes (this will keep the thin veggies crisp). Mix the lemon juice, garlic, honey, shallots, and capers in a small bowl. Slowly drizzle in the olive oil.

  2. Drain the fennel and asparagus and place in a medium bowl. Pour the dressing into the bowl and toss with the vegetables. Place in refrigerator for 30 minutes before serving (this will soften the veggies slightly).
