This low carb lomo saltado dish is easy. Like ridiculously easy. Like it should be illegal how easy it is considering how much flavor is packed into every bite. I forgot how delicious lomo saltado was until this week and now I’m making it all the time!

I first learned about lomo saltado years ago when I was working for a major tech company in California. By the end of the week, after creating 5-7 recipes, not only were we exhausted and wanted an easy meal to prep but we also had a good amount of leftover french fries. Enter lomo saltado. This Peruvian stir fried beef dish gets its zest from aji amarillo paste, soy sauce, and vinegar. That’s it! And yet the combination of peppers, onions, tomatoes, beef, the simple sauce, and french fries makes this a shockingly fulfilling meal.

OK so I didn’t have leftover french fries, but what I did have were a few delicious parsnips! And let me tell you, if lomo saltado was delicious before, adding in parsnips fries makes it out of this world! The sweetness of the parsnips plays so well with the salty-spicy original recipe you dont even miss the french fries! You gotta love when a low carb recipe makes you forget that anything’s missing. The low carb lomo saltado will be a repeat offender in your kitchen for sure.

This Peruvian dish is a powerhouse of flavor! Sauteed peppers and onions add sweet crunch to caramelized beef. But the star of this dish is the spicy and salty aji amarillo-soy sauce. Its the perfect contrast for the parsnips fries making this a perfect low carb meal.

  1. Preheat the oven to 400 degrees. Toss the cut parsnips with 1 tbsp oil and salt to taste. Place on a baking sheet and roast for 15-20 minutes, or until soft and caramelized.

  2. In a small bowl, mix the minced garlic, soy sauce, vinegar, and aji amarillo. Add the sliced beef and marinate for 1 hour.

  3. Drain the beef, reserving the marinade. In a large skillet on high heat, heat 2 tbsp oil. Add beef and sear for 2-3 min on each side. Add in the peppers, onions, and tomatoes. Saute for 2-3 minutes. Add in 3-4 tbsp of the reserved marinade and boil for 2-3 minutes or until sauce thickens. Toss in the parsnips fries and season with salt, cilantro, and green onions.
