Ohhhh man is it hard to be back after vacation, amiright?? These past few weeks have been an incredibly calming, jam-packed, sun-soaked adventure. We were in Key Largo for an amazing wedding (and yes, the wedding cake was a hit!!); spent a week in a condo overlooking the white sandy beaches of South Beach Miami (eating, drinking, and swimming with sharks- all in excess); and had an eventful fourth of July weekend in Connecticut meeting a new addition to the family. But all of that time in vacation mode now means I’m feeling less alert and slightly more sluggish than usual. And the one too many tropical cocktails and decadent vacation food has definitely weighed down my usual hop out of bed this morning. Which is why this recipe for Lemon Blueberry Granola with CBD is a perfect meal to jump-start my post-vacation gears.

Lemon Blueberry Granola with CBD
This Lemon Blueberry Granola with CBD is full of soul and tummy satisfying nuts, unrefined sugars, relaxing CBD, and a whole lotta lemon blueberry flavor.
  1. NOTE: *The amount of CBD you add to the recipe depends on the concentration. I used a concentration of 65mg/mL so I added only a small amount to yield a 10mg CBD/cookie recipe. And while I suggest purchasing a higher concentration CBD oil (lasts longer, you won’t have to add as much oil to the recipe, and you won’t taste the CBD at all) it does get a little pricey. Especially if you’re not sure about the stuff yet, it may not make sense to buy a large amount. But my advice: you’ll want the large amount…Especially after you start to feel the amazing benefits. **If you use a lower concentration of CBD (and therefore have to add more oil to equal 200mg) then subtract a tsp or two of butter so the cookie isn’t too oily.
  2. Preheat oven to 300 degrees. Line 2 baking sheets with parchment paper.
  3. In a small bowl, mix the CBD into the cooled, melted butter.
  4. In a large bowl combine the oats, wheat germ, nuts, pumpkin seeds, salt,, cinnamon and lemon zest.
  5. In another bowl, combine the CBD butter, honey, and vanilla. Pour the mixture onto the oat mixture and mix thoroughly until all the dry ingredients are moistened. Divide the mixture between the baking sheets.
  6. Bake the granola for 30 minutes, stirring often, or until it turns golden brown. Remove the sheets from the oven and let the granola cool slightly. As soon as you can handle it, scrape it off the sheets into a large bowl and leave to cool completely. Stir in the blueberries and toss well. Store in an airtight container for up to a week.
