  1. Soak the chillies and lemongrass in boiling water for 30 minutes. Drain and place in a food processor. Add the remaining ingredients and blender until a smooth paste (add a little water if the paste it too dry). Portion the paste into ice cube trays and freeze. Once frozen, place cubes in freezer bag for storage in freezer.
