If you’ve been following me lately (thank you!) I’m sure you’ve noticed the semi abrupt absence I took recently. It’s been… quite a month, to say the least. But I’m so excited to be back, and just in time for pumpkin season!! And don’t worry, these guilt free pumpkin pancakes are simple to make and can be enjoyed allllll season long ( and yes, I know its on the early side to get excited about pumpkin. I’m one of those pumpkin fanatics that can wait for pumpkin everything).
As I mentioned, thank you to those who have been following my blog! And thank you to any new readers whose attention I caught with this pumpkin pancake recipe! This past month has been a doozy but I’m happy to say that our move to Maine went off without (much of) a hitch! As you can imagine, packin’ up the entire contents of our lives, tending to an active 3 year old, finishing up jobs, and (spoiler alert) learning that we are expecting a new munchkin early next year (!!!!) made it impossible to do anything in the kitchen. But after weeks of paper plates and take out meals, I’m happy to say that The Farmstead Table is back! And slightly improve, I must say.
Life in Maine is just as picturesque as you’d expect. Mornings spent among the rocky shore of the Atlantic; picnics eaten deep within a dense forest (both within 5 minutes from our house!); and a beautifully vintage blueberry covered kitchen to play in and create new recipes. And since the leaves are just starting to change color outside my kitchen window (and its technically Fall in 10 days), why not break in our new culinary adventure with some delicious pumpkin pancakes. Guilt Free Pumpkin Pancakes to be exact, because…. well its still 10 days to Fall so I imagine I’ll be eating A LOT of these pancakes.
