Until then, a quick and tasty meal is necessary to keep our excitement (and now detailed planning) going strong. This Green Mole Chicken with Black Bean and Zucchini Salad (with homemade tortillas, yo!) recipe was the perfect quick meal to prepare as the news came in.
I discovered green mole a few years ago and was shocked I had never tasted it before! I am obsessed with red moles but their labor-intensive process deters from making it during a busy work week. That’s why this green mole is so amazing! It’s like a tomatillo salsa on steroids! And its extra healthy because of the secret ingredient: romaine lettuce! Weird, right? Not at all! The romaine gives this sauce body and brightness with no raw lettuce flavor at all.
Another beautiful aspect of this green mole chicken recipe is it’s open to interpretation. As with red moles, you can add any combination of ingredients to make it your own. It’s a great sauce to have on hand for a last minute taco night. And because its me and I’m all about the crunchy and complementary salads these days (yay for Spring!), the black bean and zucchini salad pairs nicely either a side or a taco filling.
